- 2 large sweet potatoes, peeled and cut into 1 inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 3 tablespoons apple cider
- 1 tablespoon maple syrup
Instructions
- Heat oven to 425°F. Line a baking sheet with parchment for easier cleanup.
- Toss the sweet potato cubes with olive oil, salt, pepper, cinnamon, and nutmeg. Spread them out in a single layer.
- Roast for 25 minutes.
- Whisk the apple cider and maple syrup together.
- Pull the pan out, drizzle the cider mixture over the potatoes, and gently toss.
- Return to the oven for 10 minutes, or until the edges caramelize and the centers are tender.
