  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a small bowl, combine apricot preserves, soy sauce, Dijon mustard, olive oil, lemon juice, and minced garlic.
  4. Heat an ovenproof skillet over medium-high heat and add the chicken breasts. Sear for 2-3 minutes on each side until golden brown.
  5. Pour the apricot glaze over the chicken breasts.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze is caramelized.
  7. Garnish with fresh thyme if desired. Serve with rice or roasted vegetables.
