- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup apricot preserves
- 2 tablespoons soy sauce
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 2 cloves garlic, minced
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- In a small bowl, combine apricot preserves, soy sauce, Dijon mustard, olive oil, lemon juice, and minced garlic.
- Heat an ovenproof skillet over medium-high heat and add the chicken breasts. Sear for 2-3 minutes on each side until golden brown.
- Pour the apricot glaze over the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze is caramelized.
- Garnish with fresh thyme if desired. Serve with rice or roasted vegetables.
