- 1.5 lbs Brussels sprouts, trimmed and halved
- 1 cup dried cranberries
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/4 cup balsamic glaze
- 1/2 cup microgreens for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss Brussels sprouts and dried cranberries with olive oil, salt, and pepper.
- Spread out Brussels sprouts and cranberries on a large baking sheet and roast in the oven for 20-25 minutes, or until Brussels sprouts are golden brown and crispy.
- Drizzle the balsamic glaze over the roasted Brussels sprouts and cranberries, toss gently to coat.
- Transfer to a serving dish and top with fresh microgreens before serving.
