- Caramelize the Onions: Heat the olive oil and butter in a large skillet over medium-low heat. Add the sliced onions and salt. Cook them slowly, stirring every few minutes. You want them to turn a deep, golden brown, which usually takes about 30 to 40 minutes. If they start to stick or burn, add a splash of water to the pan. In the last minute of cooking, stir in the balsamic vinegar to brighten the flavor.
- Prep the Crostini: While the onions are finishing, arrange the baguette slices on a baking sheet. Lightly brush them with olive oil if you like, or leave them plain. Toast them under a broiler for 1 to 2 minutes per side until they are golden and crisp. Watch them closely, as they go from toasted to burnt very quickly.
- Assemble: Spread a generous layer of softened goat cheese onto each toasted baguette slice. Top with a spoonful of the warm caramelized onions.
- Final Touch: Sprinkle a little fresh thyme or a crack of black pepper over the top. The tanginess of the goat cheese cuts through the sweetness of the onions perfectly.
