For the Green Beans:

  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

For the Garlic Aioli:

  • 1/2 cup mayonnaise
  • 1 clove garlic, finely minced or grated
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare the Green Beans:
    • Rinse and dry the green beans thoroughly. Toss them in a bowl with olive oil, salt, black pepper, and smoked paprika.
  2. Char the Green Beans:
    • Heat a large cast-iron skillet or grill pan over high heat until smoking.
    • Add the green beans in a single layer (work in batches if necessary). Let them cook undisturbed for 2-3 minutes to develop a char, then stir and cook for an additional 2-3 minutes until tender-crisp and charred in spots. Remove from heat.
  3. Make the Garlic Aioli:
    • In a small bowl, whisk together mayonnaise, garlic, lemon juice, salt, and black pepper until smooth. Taste and adjust seasoning if needed.
  4. Serve:
    • Transfer the charred green beans to a serving plate. Serve warm with the garlic aioli on the side for dipping or drizzled on top.

Notes

  • For extra flavor, sprinkle the green beans with freshly grated Parmesan or a squeeze of lemon juice before serving.
  • If you prefer a spicier aioli, add a pinch of cayenne pepper.
