- 2 cups all-purpose flour

- Zest of 1 orange
- ¾ cup fresh orange juice
- ½ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups fresh or frozen cranberries (coarsely chopped)
- ½ cup chopped walnuts (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
- Combine Wet Ingredients: In a separate bowl, whisk the orange juice, melted butter, egg, and vanilla extract until well combined.
- Mix Batter: Add the wet ingredients to the dry mixture and stir until just combined. Be careful not to overmix. Fold in the cranberries and walnuts (if using).
- Bake: Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
