Ingredients

  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Zest of 1 orange
  • ¾ cup fresh orange juice
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh or frozen cranberries (coarsely chopped)
  • ½ cup chopped walnuts (optional)

Instructions

 

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Combine Wet Ingredients: In a separate bowl, whisk the orange juice, melted butter, egg, and vanilla extract until well combined.
  4. Mix Batter: Add the wet ingredients to the dry mixture and stir until just combined. Be careful not to overmix. Fold in the cranberries and walnuts (if using).
  5. Bake: Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
