  • 1 pork tenderloin (about 1.5 pounds)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 apples, peeled and diced
  • 1/2 cup apple cider
  • 1/4 cup brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides until browned.
  4. In a small saucepan, combine apples, apple cider, brown sugar, Dijon mustard, thyme, and rosemary. Simmer until reduced to a glaze.
  5. Brush the glaze over the pork tenderloin.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  7. Let the pork rest for 5 minutes before slicing and serving with extra glaze.
