- 1 pound carrots, peeled and trimmed
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together the honey, olive oil, lemon juice, chopped parsley, chopped thyme, salt, and pepper.
- Place the carrots on the prepared baking sheet and drizzle the honey glaze mixture over them, tossing to coat evenly.
- Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring once halfway through.
- Remove from the oven and transfer the roasted carrots to a serving dish.
- Garnish with additional fresh herbs, if desired.
- Serve hot as a delicious side dish.
