Red, White, and Blue Patriotic Popsicles

These patriotic popsicles are perfect for summer celebrations, with layers of red strawberries, creamy white yogurt, and vibrant blue blueberries. They’re not only delicious but also healthy!

Ingredients

Red Layer:

  • 1 cup fresh strawberries, hulled and chopped
  • 2 tablespoons honey or agave syrup
  • 1/4 cup water

White Layer:

  • 1 cup plain Greek yogurt
  • 2 tablespoons honey or agave syrup
  • 1/4 cup milk (or as needed to thin the yogurt)

Blue Layer:

  • 1 cup fresh blueberries
  • 2 tablespoons honey or agave syrup
  • 1/4 cup water

Instructions

Red Layer:

  1. In a blender, combine the strawberries, honey, and water. Blend until smooth.
  2. Pour the strawberry mixture into the popsicle molds, filling each mold about 1/3 of the way.
  3. Insert popsicle sticks into the molds.
  4. Freeze for about 1 hour, until the red layer is firm.

White Layer:

  1. In a bowl, mix the Greek yogurt and honey. Add milk slowly until the mixture has a pourable consistency.
  2. Carefully pour the yogurt mixture over the frozen red layer, filling each mold another 1/3 of the way.
  3. Freeze for another 1 hour, until the white layer is firm.Blue Layer:

Blue Layer:

  1. In a blender, combine the blueberries, honey, and water. Blend until smooth.
  2. Carefully pour the blueberry mixture over the frozen white layer, filling the molds to the top.
  3. Freeze for at least 2-3 hours, until completely firm.

Unmolding:

To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles.

Notes

 

  • Ensure each layer is frozen before adding the next to maintain distinct layers.
  • Adjust the sweetness by adding more or less honey/agave syrup according to your preference.
  • If you prefer a more intense blue color, you can add a few drops of natural blue food coloring to the blueberry mixture.
