Ingredients
Scale
For the Green Beans:
- 1 lb fresh green beans, trimmed
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
For the Garlic Aioli:
- 1/2 cup mayonnaise
- 1 clove garlic, finely minced or grated
- 1 tsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Prepare the Green Beans:
- Rinse and dry the green beans thoroughly. Toss them in a bowl with olive oil, salt, black pepper, and smoked paprika.
- Char the Green Beans:
- Heat a large cast-iron skillet or grill pan over high heat until smoking.
- Add the green beans in a single layer (work in batches if necessary). Let them cook undisturbed for 2-3 minutes to develop a char, then stir and cook for an additional 2-3 minutes until tender-crisp and charred in spots. Remove from heat.
- Make the Garlic Aioli:
- In a small bowl, whisk together mayonnaise, garlic, lemon juice, salt, and black pepper until smooth. Taste and adjust seasoning if needed.
- Serve:
- Transfer the charred green beans to a serving plate. Serve warm with the garlic aioli on the side for dipping or drizzled on top.
Notes
- For extra flavor, sprinkle the green beans with freshly grated Parmesan or a squeeze of lemon juice before serving.
- If you prefer a spicier aioli, add a pinch of cayenne pepper.
