Ingredients
• 2 ripe bananas, mashed
• 1 cup all-purpose flour
• 1 tablespoon sugar
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 1/2 teaspoon cinnamon
• 1 egg, beaten
• 1 cup milk
• 2 tablespoons melted butter
• 1 teaspoon vanilla extract
Instructions
1. In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
2. In another bowl, whisk together the mashed bananas, egg, milk, melted butter, and vanilla extract.
3. Stir the wet ingredients into the dry ingredients until just combined.
4. Heat a lightly oiled griddle or frying pan over medium-high heat.
5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
6. Cook until bubbles form and the edges are dry, then flip and cook until browned on the other side.
7. Serve hot with syrup, fresh bananas, or your favorite toppings.
