- 6 large eggs
- 1/4 cup whole milk or cream
- 2 oz goat cheese, crumbled
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- Salt and pepper, to taste
- 2 tablespoons butter
Notes
- Prep Time: 5 minutes
- Crack the eggs into a medium-sized bowl.
- Add the milk or cream and whisk until well combined.
- Chop the fresh herbs and crumble the goat cheese.
- Cook Time: 10 minutes
- Heat a non-stick skillet over medium heat and add the butter.
- Once the butter is melted and slightly bubbling, pour in the egg mixture.
- Let the eggs sit undisturbed for about 30 seconds, then gently stir with a spatula.
- Continue to cook, stirring occasionally, until the eggs are almost set.
- Add the crumbled goat cheese and fresh herbs, stirring gently to combine.
- Cook for another minute or until the eggs are fully set but still soft.
