Southern Comfort: Baked Beans with a Twist

Baked beans are a quintessential side dish in many culinary traditions, but especially in Southern American cuisine. Who doesn’t love tender beans bathed in a sweet and tangy sauce, slowly cooked until the flavors meld together into comforting perfection?

This classic recipe gets an update with the addition of two distinctly American ingredients – maple syrup and bourbon. The result is a unique twist on baked beans that offers depth, complexity, and downhome charm.

Baked beans start with the bean itself – most traditionally navy beans or great northern beans. These small white beans become soft and creamy when soaked and slow-cooked, yet still maintain their shape and texture better than other varieties.

Before cooking, the beans must be soaked overnight in water to rehydrate them. Some recipes may skip this step, but soaking is best for evenly cooked beans that hold together. Make sure to drain and rinse them well afterwards.

Aromatics like onion, garlic, and bay leaf are added while beans simmer gently in fresh water or broth. This long, low cooking extracts maximum flavor and ensures the beans cook through without becoming mushy.

The cooking liquid for baked beans is where you can get creative. Most recipes include molasses or brown sugar to provide a sweet counterbalance to the beans’ natural earthiness. Ketchup, mustard, Worcestershire sauce, barbecue sauce – all make tasty additions that underscore flavor in different ways.

Our Maple & Bourbon Baked Beans incorporate maple syrup and bourbon as the star players. Sweet, amber maple syrup contains notes of caramel and vanilla that caramelize in the oven for rich depth. The bourbon adds a hint of alcoholic spice and complexity, while also emphasizing the maple flavor. Tomato paste thickens the sauce and gives it extra body. An unexpected splash of apple cider vinegar brightens everything up. Additional supporting ingredients like onion, garlic, bacon, mustard, and spices round out the medley of flavors.

The bean cooking liquid transforms into a luscious sauce as the beans bake low and slow in the oven. Baking allows the sauce to reduce down and thicken, while the beans soak up its flavor. 300-325°F is the perfect temperature range for even, gentle baking without burning. It’s important to keep an eye on the liquid level and add more stock or water as needed to prevent scorching.

Baked beans typically take 2 1/2 to 3 hours to reach ultimate tenderness and flavor fusion. The wait is worth the reward when that first spoonful hits your mouth – sweet, salty, slightly spicy and undeniably rich.

While New Englanders might disagree, baked beans are firmly established as a soul food staple. They’re a standard at Southern potlucks, barbecues, family dinners, and church functions. Leftover baked beans make excellent sandwiches the next day, piled high on white bread with some shredded cheddar. Or serve them alongside classic sides like coleslaw, corn bread and fried chicken for the full experience. They also pair exceptionally well with barbecued pulled pork or brisket. The sweet beans contrast beautifully with the smoky meat.

For many Southerners, memories of big Sunday dinners or 4th of July celebrations just wouldn’t be complete without baked beans. Whether enjoyed in the thick of summer or the dead of winter, they are the ultimate comfort food.

These Maple & Bourbon Baked Beans put a unique twist on a beloved recipe while still capturing that nostalgic flavor. The added depth from maple and bourbon makes them special enough for a fancy meal, but don’t be surprised if you find yourself craving this recipe all year round. Baked beans are truly timeless, and this version with a flavorful twist deserves to start a new tradition in your home.

Maple & Bourbon Baked Beans

Maple & Bourbon Baked Beans

This recipe brings a delightful twist with the inclusion of bourbon and maple syrup, giving the beans a rich and complex flavor that’s perfect for special occasions or a comforting weekend meal.

  • Total Time: 15 hours and 20 minutes
  • Yield: 810 servings 1x

Ingredients

Scale
  • 1 lb dried navy beans (soaked overnight and drained)
  • 6 cups water (for cooking beans)
  • 1 bay leaf
  • 200g bacon (chopped into small pieces)
  • 1 large onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1/2 cup maple syrup
  • 1/4 cup molasses
  • 1/4 cup bourbon
  • 1/4 cup tomato paste
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • Salt (to taste)
  • 2 cups chicken or vegetable broth (for baking)

Instructions

  1. Prepare the Beans: In a large pot, combine the soaked beans, water, and bay leaf. Bring to a boil, then reduce to a simmer. Cook until beans are just tender, about 45 minutes to 1 hour. Remove the bay leaf and drain the beans.
  2. Cook the Bacon and Vegetables: In a large oven-safe pot or Dutch oven, cook the bacon over medium heat until it starts to release its fat and becomes crispy. Add the chopped onion and cook until soft and translucent. Add the garlic and cook for another minute until fragrant.
  3. Add Flavorings: Stir in the maple syrup, molasses, bourbon, tomato paste, apple cider vinegar, Dijon mustard, smoked paprika, and black pepper. Mix well to combine all the ingredients.
  4. Combine Beans and Cooking Liquid: Add the pre-cooked beans to the pot and stir to coat them with the sauce. Pour in enough broth to cover the beans (about 2 cups, but adjust based on your pot).
  5. Bake the Beans: Preheat your oven to 325°F (163°C). Cover the pot with a lid or aluminum foil and bake in the oven for about 2-3 hours. Check periodically and stir the beans, adding more broth if they start to look dry.
  6. Final Seasoning: After baking, taste the beans and adjust the seasoning with salt and additional pepper if needed. The beans should be tender and the sauce thick and flavorful.
  7. Serve: Enjoy your homemade baked beans as a hearty side dish or over toast for a fulfilling meal.
