This easy 4-ingredient blueberry ice cream recipe takes just about 30 minutes of active prep time and results in the creamiest, fruitiest summertime treat. The sweet blueberry puree mixed into a vanilla ice cream base gives each bite a burst of fresh blueberry flavor.

Ingredients:

  • 2 cups fresh or frozen blueberries
  • 1/2 cup sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/4 teaspoon vanilla extract

Step-by-Step Instructions:

  1. Wash and hull 2 cups of fresh blueberries. Combine the blueberries and sugar in a saucepan over medium heat. Cook for 5 minutes, mashing the berries lightly to release their juices. Set aside to cool.
  2. Whip 2 cups of heavy cream to soft peaks and set aside.
  3. In a separate bowl, stir together 1 cup of whole milk and 1/4 teaspoon vanilla extract.
  4. Once cooled, stir the blueberry mixture into the milk mixture. Then gently fold in the whipped cream just until combined. Be careful not to overmix.
  5. Churn the ice cream base in an ice cream maker according to manufacturer’s instructions, usually 20-30 minutes. Transfer to a freezer-safe container and freeze for at least 4 hours before serving.
